Hello everyone, it’s great to see you again. A few of days ago, I went grocery shopping at Costco and I found a surprise. I found them selling the same brand of Kimchi I used to eat in Korea. I knew right away that there were many great dishes I could make starring Kimchi, so I bought a container right away. So, today I want to introduce to you Kimchi Pancake that Korean people love to make and eat. I’m sure you will love it too!

How to Make It

Ingredients: 1 cup of kimchi , half cup of flour, half cup of corn starch, 2 scallions, a bit of onion, 1 teaspoon of sugar, a bit of pepper, half tablespoon of red pepper powder, 3/4 cup of water, a bit of kimchi soup

Step 1. Making the Batter

Put in 1 cup of kimchi in a large bowl. Cut the kimchi with scissors. 

Add half a cup of flour, half a cup of corn starch, 1 teaspoon of sugar, half a tablespoon of red pepper powder, some kimchi soup, and a bit of pepper. 


If you have onions, slice them a little and put them in. Chop about two scallions and add them in. 

Pour about three quarters of water. Mix the ingredients well. If the batter is loose, you can add 1 tablespoon more flour. The batter is done. Then I'll fry it on the pan.


Step 2. Frying on the pan

Add 2 tablespoons oil to the preheated pan. The consistency of the batter is too lose or too thick, it’s not good. Place the batter on the pan in moderate amounts. 

Fry over medium-high heat for 2 to 3 minutes each side. Turn the pancake once it's cooked to a certain extent. 

Looks crispy and it's well-done. Put it on the plate. Kimchi pancake is really good when you eat it right away when it’s still hot. You can fry the rest of the batter in the same way.

 Notes

  • Adding corn starch makes the kimchi pancakes crispy.
  • Adding chili powder is optional.
  • If you make the pancake too big, it's less crispy. To make crispy pancakes, make them smaller.
  • It tastes better if you add generous amounts of oil to make it even more delicious.
