(Spicy Cold Noodles with Kimchi)

Kimchi Bibim Guksu

Kimchi Bibim-Guksu or Kimchi spicy noodles, is a cold noodle dish made with very thin wheat flour noodles called somyeon with the addition of seasonings and kimchi. It's definitely one of the most popular traditional noodle dishes in Korea and is especially popular during the hot summer.

 What makes this dish so unique from other cold noodle dishes is the strong spicy flavor and the combination of red pepper powder, gochujang, along with the sweet and sour flavor from vinegar and sugar. Most spicy cold noodles are prepared with the addition of sesame oil to enhance the flavor. 

Typically, Kimchi bibim-guksu contains Kimchi, julienned cucumbers, soy sauce, red pepper paste, vinegar, sesame oil, sesame seeds, and sugar.  Lastly, there is a garnish placed on top and around the spicy noodles made using hard boiled eggs, and sliced cucumbers.


How to make it

Ingredients: 8 oz. thin noodles (Korean somyeon), 1/2C kimchi

Seasonings: 1T red pepper paste, 1T soy sauce, 1T vinegar, 1T honey or sugar, 2T apple juice, 1T sesame oil, 1T sesame seeds

Step 1 Making seasoning

Put half a cup of kimchi in a bowl. Cut it appropriately with scissors. 

Add 1 tablespoon of red pepper paste, 1 tablespoon of soy sauce, 1 tablespoon vinegar, 1 tablespoon honey or sugar, 2 tablespoons of apple juice or sprite, 1 tablespoon of sesame oil. Lastly, add 1 tablespoon of sesame seeds. 

Mix it well. Boil the noodles and mix them with this sauce.


Step 2: Boiling noodles

Add half a tablespoon of salt to the boiling water. Boil a handful of thin noodles (8 oz), Somyeon. 


Pour half a cup of cold water when the noodles boil for the first time. 

When the noodles boil a second time, pour another half cup of water.

 Turn off the heat when the noodles boil for the third time and wash well in cold water. Drain well washed noodles in a strainer.



Step 3: Mixing the noodles with seasoning

Put the drained noodles into the kimchi seasoning. And mix well.


 If you have a cucumber, slice it thinly. And put them on top as a garnish. If you have boiled eggs with, put them on top as a garnish too. Delicious kimchi bibim guksu is done!

  •  boiled egg (optional)
  • sliced cucumber (optional)

Notes

  • There are both spicy and less spicy types of red pepper paste. You can purchase it according to your preference.
  • If you like spicier flavor, you can add 1 tablespoon of red pepper powder. (This is optional).
