 8 Korean Side Dishes 

Hello K Friends! Today, I went shopping for ingredients to make side dishes for the week. Have you noticed prices going up lately? Because of that, I'm here to show you how to whip up some delicious dishes on a budget, using seasonal and everyday ingredients. Hope you enjoy the recipes!

#1 Braised Potato Spam (Potato Spam Jorim)

Braised Potato Spam (Potato Spam Jorim)

Ingredients:

  • 2 medium-sized potatoes
  • 1 can of Spam

Seasonings

  •  4 tablespoons soy sauce
  • ¼ cup water
  • ¼ cup mirin
  • 4 tablespoons oligosaccharide (or honey)
  • 1 teaspoon minced garlic
  • a bit pepper
  • ½ teaspoon ginger powder
  • ½ tablespoon sugar

Instructions

Cube potatoes and Spam to similar sizes. 


Boil potatoes for 3 minutes, then drain. 


In a pan, fry Spam until golden brown, add potatoes, and the sauce mixture.




 Simmer on medium for 3 minutes until sauce thickens. Finish with 1 tablespoon sesame oil and 1 tablespoon of sesame seeds.

#2 Spicy Radish Salad (Musaengchae)

Spicy Radish Salad (Musanengchae)

Ingredients

  • 1 medium size Korean radish
  • 2 tablespoons sugar

Seasonings

  • 4 tablespoons red pepper powder
  • 2 tablespoons fish sauce
  • 1 tablespoon salted shrimp
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon sesame seeds
  • 2-3 tablespoons chopped green onions
  • 1 tablespoon vinegar (optional)

Instructions

Thinly slice the radish. Julienne it thinly. 


After slicing, add 2 tablespoons of sugar and mix well to remove moisture from the radish through osmosis. Let it sit for about 10 minutes. 

Slice some green onions. 

After 10 minutes, squeeze out excess water. Combine with the following seasonings and mix well.

  • 4 tablespoons red pepper powder
  • 2 tablespoons fish sauce
  • 1 tablespoon salted shrimp
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 1 tablespoon sesame seeds
  • 2-3 tablespoons chopped green onions
  • 1 tablespoon vinegar (optional)


#3 Marinated Eggs (Gyeranjang)

Marinated Eggs (Gyeranjang)

Ingredients

  • 10 eggs
  • ½ teaspoon salt
  • ½ teaspoon vinegar

Seasonings

  • ½ cup soy sauce
  • 4 tablespoons sugar
  • ½ cup water
  • 1 tablespoon sesame seeds
  • Some finely chopped bell peppers
  • ½ onion (finely chopped)
  • 3 tablespoons chopped green onions

Instructions

Put 10 eggs in the boiling water and then boil or 8 minutes for semi-hard yolks. After 8 minutes, cool in cold water and peel.




Marinate in the mixture of

  • ½ cup soy sauce
  • 4 tablespoons sugar
  • ½ cup water
  • 1 tablespoon sesame seeds
  • Some finely chopped bell peppers
  • ½ onion (finely chopped)
  • 3 tablespoons chopped green onions





#4 Seasoned Bok Choy (Bok Choy Namul)

Seasoned Bok Choy (Boy Choy Namul)

Ingredients

  • 8 bok choy heads
  • 1 teaspoon salt

Seasonings

  • 1 tablespoon fish sauce (or gukganjang)
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1 teaspoon minced garlic

Instructions

Blanch bok choy for 2 minutes. After 2 minutes




Cool in cold water, squeeze out excess water, chop, and then mix with seasonings

  • 1 tablespoon fish sauce (or gukganjang)
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1 teaspoon minced garlic


#5 Zucchini Potato Pancakes

Zucchini Potato Pancakes

Ingredients:

  • 1/2 medium zucchini
  • 1 medium potato
  • 1/4 chopped red bell pepper
  • 4 tablespoons starch
  • 4 tablespoons frying mix (twigim garu)
  • ½ teaspoon salt
  • 3-4 tablespoons water

Instructions

Julienne zucchini and potato. 



Mix with

  • 4 tablespoons starch
  • 4 tablespoons frying mix (twigim garu)
  • ½ teaspoon salt
  • 3-4 tablespoons water
  • some chopped red bell pepper


Fry spoonfuls in a pan with oil until golden brown on both sides.




#6 Braised Tofu (Tofu Jorim)

Braised Tofu (Tofu Jorim)

Ingredients

  • 1 block firm tofu
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • Some chopped bell peppers

Seasonings

  • 3 tablespoons soy sauce
  • 2 tablespoons cooking wine (or mirin)
  • 4 tablespoons oligosaccharide (or honey)
  • 1 teaspoon ginger juice
  • a bit pepper

Instructions

In a bowl, put 3 tablespoons of soy sauce, 2 tablespoons of cooking wine or mirim, 4 tablespoons of oligosaccharide, 1 teaspoon of ginger juice, and a little pepper. Mix well.

Remove moisture from the tofu well with kitchen towels.

Cut it into appropriate sizes. Cut it into cube shapes. Coat each piece of tofu with corn starch.



Add about 2-3 tablespoons of oil to a pan. Place the tofu in the pan. Cook over medium heat until golden brown. Flip them over when they are golden brown. 


Once the tofu is golden browned, pour the pre-made seasoning sauce over it.





#7 Seasoned Mung Bean Sprout 

Seasoned Mung Bean Sprout (Sukju Namul)

Ingredients

  • 1 bag of mung bean sprouts
  • a bit carrot
  • 2T green onions
  • 1 teaspoon minced garlic
  • 1 tablespoon gukganjang (or soy sauce)
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds
  • 1 tablespoon sesame oil

Instructions

Blanch sprouts for 2 minutes, rinse in cold water, and drain.




Mix with julienned carrot,

  • 1 tablespoon chopped green onions
  • 1 teaspoon minced garlic
  • 1 tablespoon gukganjang (or soy sauce)
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds
  • 1 tablespoon sesame oil




#8 Seasoned Fish Cake (Eomuk Muchim)

 Seasoned Fish Cake (Eomuk Muchim)

Ingredients

  • 6 fish cakes

Seasonings

  • 1-2 tablespoon red pepper powder
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds
  • 1 tablespoon sesame oil
  • 2 tablespoons oligosaccharide (or honey)
  • 2 tablespoons chopped green onions
  • 1 teaspoon sugar (optional)

Instructions

Cut 6 fish cakes in half, then slice them thinly. 

Pour hot water over the fish cakes to remove some of the oil. Then, take them out and soak them in cold water to drain. 




Put the drained fish cakes in a bowl with the following seasonings

  • 1-2 tablespoon red pepper powder
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame seeds
  • 1 tablespoon sesame oil
  • 2 tablespoons oligosaccharide (or honey)
  • 2 tablespoons chopped green onions
  • 1 teaspoon sugar (optional)
