Have you ever tried making a Korean side dish with collard greens? They’re similar to kale, but when seasoned, they have a unique texture and flavor. It’s a healthy, flavorful dish that pairs perfectly with rice.

Ingredients

  • 13 oz (360 g) collard greens 
  • 1–2 green onions

Seasoning

  • 3 tbsp soy sauce
  • 3 tbsp fish sauce
  • 1 tbsp garlic
  • 4 tbsp gochugaru
  • 1 tbsp honey
  • 1 tbsp sesame seeds
  • 1 tbsp maesil (plum extract)
Instructions

1. Trim the tough ends of the collard greens and cut them in half.

2. Add 1 tsp salt to boiling water and blanch for about 1 minute.

3. Rinse in cold water and drain well.


4. Chop the green onions.

5. Mix all seasoning ingredients in a bowl.

6. Coat each leaf evenly with the seasoning. If the leaves are large, cut them into smaller pieces.


Tips

  • Don’t overcook — keep the texture tender but not too soft
  • Coat each leaf well for better flavor
  • Great with warm rice
