Korean Cucumber Salad (Oi Muchim)

Do you always have to salt
cucumbers first? Today, we’re making a no-salt cucumber salad that keeps its
natural crunch and is much simpler to prepare. It’s light, refreshing, and
perfect when you want something quick and easy.
Ingredients
- 6 mini cucumbers
- 1/2 onion
Seasoning
- 2 tbsp gochugaru
- 1 tbsp sugar
- 1 tbsp maesil syrup (plum extract)
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp vinegar
- 1/2 tbsp garlic
- 1 tbsp sesame oil
- 1 tbsp sesame seeds

Instructions
1. Cut the cucumbers in half and remove the seeds.
2. Slice the onion to a similar size.
3. Add all the seasoning ingredients.
4. Mix everything lightly.
Tips
- No need to salt — it keeps the cucumbers crisp
- Don’t slice too thin for better texture
