Can $20 at Trader Joe’s really make 4 Korean dishes? In this post, I’ll show you how to make simple and comforting Korean meals using easy-to-find ingredients. No Korean grocery store needed — let’s make it together.

DISH 1 – Seafood Pancake (Haemul Pajeon)

A crispy Korean pancake loaded with seafood and green onions. 

Ingredients

  • 10 green onions
  • A little carrot (optional)
  • 1 can calamari
  • 1 cup pancake mix
  • ¾ cup water
  • 1 egg
  • Cooking oil

Soy sauce

  • 1T soy sauce
  • 1T vinegar or lemon juice
  • 1t honey or sugar
  • 1t gochugaru (optional)

Instructions

1. Cut green onions into bite-sized pieces and slice carrot thinly.

2. Drain the calamari. Put green onions, sliced carrot, and calamari.

3. Mix the pancake mix and water (don’t add too much water).

4. Heat oil in a pan and spread the batter thinly.

5. Then crack an egg on top.

6. Cook until golden, then flip. Cook both sides until crispy.

7. Mix dipping sauce and enjoy.

 

DISH 2 – Tofu Tuna Stew

A simple and comforting Korean-style stew, perfect with rice.

Ingredients

  • 1 block tofu
  • 1 can tuna (drained)
  • ½ onion

 Seasoning

2 tbsp soy sauce

1 tbsp tuna liquid or fish sauce

  • 2 tbsp cooking wine
  • ½ tbsp sugar
  • 1 tbsp gochugaru
  • 1 tbsp gochujang
  • ½ tbsp garlic
  • 1 cup water
  • A little black pepper

Instructions

1. Mix all seasoning ingredients in a bowl.

2. Slice onion and cut tofu into pieces.

3. Layer onion, tofu, tuna, and sliced green onions in a pan.

4. Pour the seasoning sauce over.

5. Simmer on medium-high heat for about 10 minutes.

6. Serve with rice.

 

DISH 3 – Crispy Sweet Potato Fry

Crispy on the outside, soft and sweet on the inside.

Ingredients

  • 2 sweet potatoes
  • 1 cup frying mix
  • ¾ cup water
  • 3 tbsp frying mix (for coating)
  • A little parsley (optional)
  • Cooking oil

 

Instructions

1. Slice washed sweet potatoes (skin on).

2. Toss the sweet potatoes with 3 tbsp frying mix in a bag.

3. Mix the batter (frying mix + water).

4. Dip each piece into the batter.

5. Fry over medium heat until golden.

6. For extra crispiness, fry them one more time.

 

DISH 4 – Tteokbokki (Upgraded)

A popular Korean street food with a rich and savory sauce.

Ingredients

  • 1 pack Trader Joe’s tteokbokki
  • Some cabbage
  • ½ onion
  • 2 fish cake
  • Some sausages
  • 2 eggs
  • 2 green onions
  • 1 cup water
  • 2 tbsp soy sauce

Instructions

1. Cut cabbage, onion, and fish cake into pieces.

2. Add water and soy sauce to the tteokbokki sauce.

3. Add rice cakes and all ingredients.

4. Cook until the sauce reduces by about half.

5. Add green onions and cook for 30 seconds.

6. Serve warm.

Tips

  • Keep the pancake thin for extra crispiness
  • Fry sweet potatoes twice for crispier texture
