 Crispy Potato Cheese Pancake

If you have just one potato and a little cheese, you can make these crispy and cheesy potato pancakes in no time. They’re golden and crispy on the outside, with warm, melted cheese inside. This simple Korean-style potato pancake is one of my favorite ways to enjoy potatoes, and it's perfect as a snack, appetizer, or light meal.

Ingredients

  • 1 large potato (or 2 small potatoes)
  • 2 tablespoons potato starch
  • ½ teaspoon salt
  • Cheese of your choice
  • Cooking oil
  • A little black pepper
  • 1 teaspoon garlic powder (optional)

How to Make 

1. Prepare the Potatoes: Peel the potato and slice it as thinly as possible. Then cut it into thin strips. Place the potato strips in a bowl and add ½ teaspoon of salt. Mix well and let them sit for about 10 minutes. After 10 minutes, squeeze the potatoes firmly to remove as much moisture as possible. 




2. Make the Potato Mixture: Add 2 tablespoons of potato starch to the potatoes.If desired, add garlic powder and black pepper. Mix everything until the potato strips are evenly coated. 


3. Cook the Potato Pancakes: Heat a frying pan over medium-low heat and add a little cooking oil. Place about 1 tablespoon of the potato mixture into the pan and spread it into a thin round shape. Cook until the bottom is golden brown, then flip. Cook the other side until golden and crispy. Repeat with the remaining potato mixture. 


4. Add the Cheese: Place cheese on top of one crispy potato pancake. Cover with another potato pancake to create a sandwich. Reduce the heat to low and cook for 1–2 minutes, or until the cheese is melted. Remove from the pan and serve immediately. 


Tips 

  • Slice the potatoes as thinly as possible for the best texture.
  • Removing excess moisture helps create a crispier pancake.
  • Potato starch helps bind the potatoes together and adds extra crunch.
  • Cook over medium-low heat to achieve an even golden crust.
  • Serve immediately while the cheese is warm and stretchy.
