Korean Spicy Cold Noodles, Bibim Guksu
When summer arrives in
Korea, many people start craving something cool, spicy, and refreshing. One of
the most popular dishes for hot weather is Bibim Guksu, a simple noodle dish
tossed in a sweet, tangy, and spicy sauce. The combination of chewy noodles,
crisp cucumber, and bold Korean flavors makes this dish incredibly satisfying.

Ingredients
- (100g/3.5 oz) somyeon (thin wheat noodles)
- A little cucumber, julienned
- 1 boiled egg
- Crushed toasted sesame seeds, for garnish
Sauce
- 1½ tbsp soy sauce
- 1½ tbsp vinegar
- 1 tbsp maesil syrup (Korean plum syrup)*
- 1 tbsp sugar
- 1 tbsp sesame oil
- 1 tbsp gochugaru (Korean red pepper flakes)
- 1 tbsp gochujang (Korean red pepper paste)
- 1 tsp minced garlic
- 3 tbsp pear juice or apple juice
*If you don't have maesil
syrup, add an extra ½ tablespoon of sugar instead.
How to Make Bibim Guksu
Step 1: Make the Sauce: In a
large bowl, combine: 1½ tbsp soy sauce, 1½ tbsp vinegar, 1 tbsp
maesil syrup (or add an extra ½ tbsp sugar), 1 tbsp sugar, 1 tbsp sesame oil, 1
tbsp gochugaru, 1 tbsp gochujang, 1 tsp minced garlic, and 3 tbsp pear juice or
apple juice. Mix well until smooth and evenly combined.
Step 2: Prepare the Toppings: Julienne the cucumber. Cut the boiled egg in half. Lightly crush some toasted sesame seeds for garnish.
Step 3: Cook the Noodles: Bring a pot of water to a boil. Add the somyeon noodles and cook for about 3½ minutes. Drain and rinse thoroughly under cold running water until the noodles are completely cool. Drain well.
Step 4: Mix Everything Together: Add the noodles to the prepared sauce. Toss until every strand is evenly coated.
Tips
- Rinsing the noodles removes excess starch and gives them a chewier texture.
- For a milder version, reduce the gochugaru or gochujang slightly.
- The sauce should not be overly thick. A slightly loose sauce coats the noodles more evenly.
- Lettuce, cabbage, or sprouts make great additions for extra crunch and freshness.
The chewy noodles soak up the flavorful sauce, while the cucumber adds freshness and crunch. It's one of the reasons this dish has remained a favorite Korean summer meal for generations.
