Gaji Bokkeum and Gaji Namul

everyone! Hope you are doing well! Today, I’m going to introduce two healthy side
dishes using a very nutritious ingredient, eggplants. We have stir-fried
eggplant, and steamed eggplant side dishes. Stir-fried eggplants have a chewy
texture that’s delightful, while steamed eggplant side dish offers a soft and
delicate texture. Hope you enjoy this recipe!

Stir-Fried Eggplant (Gaji Bokkeum)
Ingredients
- 3 medium-sized eggplants
- 3 large mushrooms
- 1 red chili pepper
- 2 cloves of garlic
- 2 green onions
- 2T soy sauce
- 1T oyster sauce
- 1/2T red pepper flakes (gochugaru)
- 1t sugar
- 1/2T minced garlic
- a pinch of black pepper
1.
Let's make the seasoning sauce. Put 2 tablespoons of soy sauce, 1 tablespoon of
oyster sauce, 1/2 tablespoon of red pepper flakes (gochugaru), 1teaspoon of
sugar or honey, 1/2 tablespoon of minced garlic and a bit of black pepper. Mix
well.

Slice 2 green onions into bite-sized pieces. Slice 1 chili red pepper thinly and mince 2 cloves of garlic.

Trim the ends of the eggplants and cut them in half lengthwise. Slice them into
evenly-sized pieces.

Slice about 3 large mushrooms. Now, let's grill the eggplants and mushrooms.
5. Preheat a pan and add the eggplants and mushrooms. Grill them over medium-high heat for 5 minutes, moving them back and forth. Stir them occasionally.
6. 5 minutes later, once the eggplants are fully
cooked, add the sliced green onions and red chili pepper, the prepared
seasoning sauce, and 1 tablespoon of sesame oil into the pan. Lastly, add 1
tablespoon of ground sesame seeds and mix well.
You
now have a delicious and chewy stir-fried eggplant dish!
#2 Steamed Eggplant Side Dish
Ingredients
- 3 medium-sized eggplants
- 1 green onion
- 2 cloves of garlic
- 1 red chili pepper
- 2T soy sauce
- 1T fish sauce or fish extract
- 1/2T minced garlic
- 1T sesame oil
- 1t sugar or honey
- 1T sesame seeds
Instructions

Slice 1 green onion thinly and chop 2 cloves of garlic. Cut the red chili
pepper in half and slice it thinly.

Trim the ends of the eggplants. Cut them in half lengthwise and then into
bite-sized pieces.

When the water is boiling, place the eggplants in a steamer. Cover the lid and steam them for
about 4 minutes. After 4 minutes, take them from the steamer and let them cool
slightly.
4. How to make seasoning sauce:
- 2 tablespoons of soy sauce for the soup (gukganjang),
- 1 tablespoon of tuna fish sauce or fish sauce
- 1 tablespoon of sesame oil
- 1/2 tablespoon of minced garlic
- 1 teaspoon of sugar or honey
- sliced green onion and red chili pepper
- 1 tablespoon of ground sesame seeds
Mix the seasoning sauce well.

Place the eggplants in the seasoning sauce bowl. Gently mix them together. If
some of the eggplants are large, you can tear them in half. Transfer the dish
to a serving plate.
Delicious and soft steamed eggplant side dish!
How

Notes
- If you don't have oyster sauce, you can add 1 tablespoon of fish sauce instead.
- If you place the eggplant skin side down while slicing, it will be easier to cut. Slicing them too thinly will result in a mushy texture.
- Adding mushrooms to the stir-fried eggplants enhances the flavor and texture.
- If you grill them over high heat, the eggplants may become burning.
