Korean Lettuce Salad, Sangchu Geotjeori
A fresh and simple Korean salad that takes just minutes
to make—perfect with BBQ or even a bowl of rice!
Ingredients (Serves 2)
- 400g (14oz) lettuce
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp vinegar
- 1 tbsp Korean red pepper flakes (gochugaru)
- 1 tbsp sugar
- 1 tsp minced garlic
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
- ½ small onion, thinly sliced
- 1 small cucumber (optional), sliced diagonally
Instructions
Step 1. Make the Sauce
In a bowl, mix:1 tbsp soy sauce, 1
tbsp fish sauce,1 tbsp vinegar, 1 tbsp gochugaru,1 tbsp sugar, 1 tsp minced
garlic
Step 2. Prepare the Lettuce
Cut off the bottom of the
lettuce and separate the leaves. Wash them 2–3 times in cold water. Shake off
excess water or use a salad spinner. Tear the leaves by hand into bite-size
pieces (don’t use a knife—it keeps the texture better).
Step 3. Add Onion and Cucumber
Thinly slice half a small
onion. (Optional) Slice a cucumber diagonally if you have one.
Step 4. Mix the Salad
In a large bowl, add the sliced onion and cucumber.
Pour in the sauce and mix quickly. Add the lettuce and gently toss everything
together by hand.
Step 5. Finish and Serve
Drizzle 1 tbsp sesame oil over
the salad. Sprinkle 1 tbsp toasted sesame seeds. Serve right away!

Perfect with grilled pork belly (samgyeopsal), bulgogi, or any grilled meat. Or just enjoy it on top of a warm bowl of rice!
