Fried shrimp is a popular dish known for its crispy exterior and moist interior. By coating the shrimp in flour and then dipping them in a batter before frying in oil, you can enjoy a freshly cooked taste and texture.

Saewoo Twigim, Deep Fried Shrimp

Ingredients:

  • 20 medium-sized shrimp
  • 1 cup frying mix
  • 1 cup cold or ice water
  • cooking oil

Instructions

These are peeled shrimp. There is a sharp point in the middle of the tail, remove this as it contains a water pocket that can cause the oil to splatter when deep frying.


Make slight diagonal cuts on the front and back of each shrimp. This prevents the shrimp from curling up during deep frying and helps them appear longer.

Coat the prepared shrimp with flour.


Pour 1 cup of twigim garu. (frying mix). Add 1 cup of cold or ice water.



Frying: Dip the shrimp into the batter mix and then deep fry in the oil.  Heat the oil to 360°F (180°C). Deep fry for about 3-4 minutes until golden brown. Remove the shrimp and let them cool slightly.


For extra crispiness and flavor, re-fry them for about 20 seconds. Enjoy your crispy and savory shrimp tempura! Crispy and savory saeu(saewoo) twigim is done!
