Green Pea Rice
The other day at the farmers’ market, I saw fresh green
peas and smiled. It brought back memories of my mom’s summer green pea
rice just like in the Netflix K-drama When Life Gives You Tangerines, where a
quiet meal says everything.
Ingredients
- 2 cups short-grain rice
- 2½ cups water
- 1 cup fresh green peas (shelled)
Instructions
Step 1
Rinse the rice until the water runs clear. Drain, then
soak in 2½ cups water for 30 minutes.
Step 2
Meanwhile, shell the peas. Fresh ones are sweet and
tender—worth the extra step!
Step 3
Bring the soaked rice to a boil. Stir once, then add 1
cup of peas. Cover and simmer on low for 10–15 minutes.
Step 4
Turn off the heat. Let it rest for 10 minutes. Gently
fluff with a paddle.
A bowl of green pea rice—light, comforting, and full of
