These Korean braised pork ribs were always a hit!

Braised Pork Ribs (Dwaeji Galbijjim)

Hello everyone! Today, I want to introduce a dish that's always popular at our house: Korean braised pork ribs. These ribs are super tender and feature a mix of sweet, savory, and just the right amount of spice. It's a family favorite that's easy to make and even easier to love. Hope you enjoy this recipe!😊

Braised Pork Ribs

Ingredients

  • 3 lb. pork ribs (1.4 kg)
  • 14oz (400 g) radish
  • 1 carrot
  • a little ginger
  • 2 cups water

Seasoning Sauce

  • 1/2 cup soy sauce
  • 1/2 cup of cooking
  • 4 tablespoons sugar
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • a little pepper

 Instructions

These are Costco pork ribs. Cut into bite-sized pieces, trim the fat, and rinse thoroughly to remove any bone powder. Soak the cleaned ribs in cold water for 30 minutes to remove any meaty smell.


After 30 minutes, remove the meat from the water. Rinse once and drain it.



Add 1 tablespoon of vinegar to remove any unwanted smell from the meat. Put it in boiling water and blanch for about 5 minutes. After 5 minutes, Remove the blanched pork ribs and drain them in a colander.





Making the seasoning sauce: In a bowl, put

  • 1/2 cup of soy sauce
  • 1/2 cup of cooking wine
  • 4 tablespoons of sugar
  • 1 tablespoon of minced garlic
  • 1 teaspoon of minced ginger
  • a little pepper. Mix well.

Preparing the vegetables: Cut the radish into bite-sized pieces. Rotate and cut into circles. Cut the carrot into suitable sizes and rotate and cut into circles. Slice the shiitake mushrooms. Cut them into appropriate sizes. If you have red chili peppers, slice 2 or 3 of them. This is optional. Thinly slice some green onions.





Put the blanched meat in a pot. Add the seasoning sauce. Pour enough water to cover the meat (about 4 cups). Bring to a boil. Once it starts boiling, cover the lid and simmer over medium heat for about 20 minutes.




After 20 minutes, if there's excess oil, skim it off. Add the sliced vegetables. Simmer over medium heat for another 20 more minutes. 




After 20 more minutes, Add the sliced green onions and red chili peppers and simmer over medium-high heat for about 5 minutes.

After 5 minutes, Add 2 tablespoons of oligosaccharide or corn syrup. And 1 tablespoon of sesame seeds. And mix well. Flavorful braised pork ribs is done!


Notes

  • Use a bit of ginger as an alternative to vinegar.
  • Rotate and cut into circles the radish won't become mushy when cooked.
  • Potatoes can be used in place of radish.
