Rice paper cabbage egg
dumplings are a delicious and healthy dish made by mixing finely chopped
cabbage and scrambled eggs and wrapping them in rice paper. These dumplings are
lightly pan-fried, offering a crispy, soft, and chewy texture, with a savory and
slightly sweet flavor. When dipped in a tangy soy sauce, they make a perfect
appetizer or a great meal on their own. Hope you enjoy!
Ingredients
- 1/5 head of cabbage
- 10 small rice papers
- 1/4 carrot
- 1/4 onion
- 3 eggs
- a little chives (optional)
- 1 tablespoon oyster sauce or soy sauce
- a little pepper and salt, cooking oil
Instructions
Thinly slice the cabbage, rinse, and drain well. Place in a bowl. Julienne a small amount of carrot and a little onion. Add to the cabbage. Add 1/2 teaspoon of salt, mix well, and let sit for 10 minutes. Chop some chives (optional).
After 10 minutes, squeeze
out the moisture from the vegetables. Preheat a pan, add 1 tablespoon of oil,
and 3 eggs. Add a pinch of salt and pepper. Scramble the eggs. Once partially
cooked, add vegetables and chives. Add 1/2 tablespoon of oyster sauce (or soy
sauce) and 1/2 tablespoon of sesame oil. Stir-fry on medium heat for 1 minute.
After 1 minute, let cool for
5 minutes on a plate. Soak rice paper in cold water, shake off excess. Place 2
tablespoons of the mixture on the rice paper. Roll from the bottom, folding in
the sides, and continue rolling tightly. Repeat the process.
Heat 1 tablespoon of oil in a preheated pan. Place dumplings in the pan without sticking to each other. Cook on medium heat for 2-3 minutes per side until crispy. Flip after 2-3 minutes and cook the other side. Serve the dumplings on a plate.
Enjoy as is or with
soy sauce for extra flavor.
