Crispy Zucchini Rice Paper

Ingredients:
- 1 zucchini
- 10 small rice papers
- some breadcrumbs
Instructions
Trim ends of the zucchini,
cut in half, then slice.
Soak a rice paper in cold water for about one second. Place a zucchini slice on the soaked rice paper. After 10-20 seconds, fold the rice paper around the zucchini.
Coat with breadcrumbs. If
they don’t stick, brush the rice paper with water.
Heat 2 tablespoons of oil in
a pan over medium-high heat. Cook zucchini for 3 minutes on each side until
golden brown.
Serve with sweet chili sauce
or pasta sauce. Enjoy your crispy and delicious zucchini rice paper!
