Rice Paper Kimbap
Looking for a fresh and
healthy meal that doesn’t require any cooking? Try this Rice Paper Kimbap — a
Korean-style roll made with fresh vegetables, shrimp, and a tasty peanut
dipping sauce. It’s light, colorful, and super easy to make!
Ingredients (Makes 8 Rolls)
- 8 small rice paper wrappers
- 2 sheets of dried gim (seaweed)
- 8 lettuce leaves
- ½ cucumber
- ½ red bell pepper
- ½ yellow bell pepper
- ½ carrot
- 8 large shrimp (or use your favorite protein)
- 1 tbsp soy sauce
- 2 tbsp lemon juice (or 1T vinegar)
- 1 tbsp honey (or sugar)
- 2 tbsp peanut butter
How to Make It
Step 1. Prep the Veggies
Slice the cucumber, bell
peppers, and carrot into thin strips. Wash the lettuce and shake off excess
water.
Step 2. Prepare the Shrimp
Microwave the shrimp for
about 2 minutes until pink and plump. Be careful not to overcook. You can also
use cooked chicken, tofu, or any protein you like.
Step 3. Cut the Gim
Cut each seaweed sheet into
4 pieces. You’ll need 8 pieces in total.
Step 4. Assemble the Rolls
Place a piece of gim on your
board. Quickly dip one rice paper sheet in cold water (just 1 second!) and
place it on top of the gim. Add lettuce leaf, then a little bit of each veggie
and a shrimp. Fold the lettuce over the filling, then roll everything up
tightly like a burrito. Tuck in the sides as you go. Repeat for all 8 rolls.
Step 5. Make the Sauce
In a small bowl, add 1
tablespoon of soy sauce, 2 tablespoons of lemon juice (or 1T vinegar), 1
tablespoon of honey (or sugar), and 2 tablespoons of peanut butter. Mix well
until smooth.
6. Serve
Cut the rolls in half and
arrange them on a plate. Serve with the dipping sauce on the side. Enjoy!
