 Easy Watermelon Rind Kimchi 

Don’t throw out your watermelon rind!

This quick kimchi is crunchy, refreshing, and ready to eat right away—no fermentation needed.

Ingredients

  • 500 grams (about 1 pound) watermelon rind (white part only)
  • ½ tbsp salt
  • 2 tbsp sugar
  • 1 tbsp Korean chili flakes (gochugaru)
  • 1 tsp minced garlic
  • 1/4 tsp grated ginger
  • some chopped green onion
  • 2 tbsp fish sauce
  • 1 tsp honey
  • Sesame seeds (optional)

How to Make It:

Remove the green skin and any red flesh.

Use only the white part and cut it into small squares. 

Add ½ tbsp salt and 2 tbsp sugar.

Mix well and let it sit for 30 minutes, then drain the liquid. 

Add 1 tbsp Korean chili flakes (gochugaru),1 tsp minced garlic, a bit of grated ginger, some chopped green onion, 2 tbsp fish sauce, 1 tsp honey. Mix everything well. Add more chili flakes if you like it spicy. 

Sprinkle with sesame seeds. Chill and enjoy! A super easy, zero-waste kimchi for hot summer days.
