Korean-Style Jamaican Chicken
In Korea, Jamaican Chicken
is a super popular menu item at BBQ Chicken. It’s sweet, slightly spicy, and
full of warm spices, a flavor you won’t forget once you try it. The good news?
You can make it easily at home with just a few ingredients!
Ingredients
- 4 boneless chicken thighs (about 500g / 1 lb)
- 1 ½ tbsp sugar
- 1 ½ tbsp soy sauce
- 1 tbsp tonkatsu (pork cutlet) sauce, or Worcestershire sauce
- 1 tbsp corn syrup (or honey)
- ½ tbsp Korean chili flakes (gochugaru) or paprika powder
- ½ tbsp minced garlic
- ½ tbsp gochujang (Korean red pepper paste)
- ½ tsp cinnamon powder
- A little black pepper
- A little ginger powder (optional)
- 1 tbsp cooking oil
- 1 tbsp lemon juice
- ½ tbsp potato starch or corn starch
Instructions
Step 1
In a bowl, mix together: 1 ½
tbsp of sugar, 1 ½ tbsp of soy sauce, 1 tbsp of cooking oil, 1 tbsp of lemon
juice, ½ tbsp of minced garlic, ½ tbsp of Korean chili flakes or paprika, ½
tbsp of gochujang, ½ tbsp of starch, 1 tbsp of tonkatsu sauce, ½ tsp of cinnamon,
a little black pepper, and ginger powder if using.
Step 2
Rinse the chicken in cold
water and pat dry with paper towels. Add to the sauce and coat well. Cover with
plastic wrap or a lid and marinate in the fridge for at least 3-4 hours. If you
marinate it overnight, the flavor gets even richer.
Step 3
Place the chicken on
parchment paper in an air fryer. Cook at 340°F (170°C) for 15 minutes, flip,
brush with leftover sauce, and cook for another 10 minutes.
Step 4
The outside turns
beautifully golden while the inside stays tender and juicy.
Each bite is sweet, savory,
and gently spicy with a hint of cinnamon.
