Rice Paper Salad
A fresh, crunchy, and super easy salad made with rice paper! No frying, no wrapping—just toss and enjoy!
Ingredients:
- 3–4 large rice paper sheets (cut into thin strips)
- 8 Frozen peeled shrimp
Dressing
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar (or substitute with lemon juice)
- ½ tsp salt
- 1 tbsp honey or sugar
- 1 tbsp whole grain mustard
- A pinch of black pepper
Vegetables & Fruits
- 1/4 cucumber
- 1/4 red onion
- 1/4 red & yellow pepper
- 3 lettuce leaves
- 1/4 apple
- 1 tomato
- 1 small orange (optional)
Instructions
Step 1: Make the dressing
In a large bowl, mix the
following: 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar (or lemon juice), ½ teaspoon of salt, 1
tablespoon of honey or sugar,1 tablespoon of whole grain mustard, a pinch of
black pepper. Whisk everything together until well combined.
Step 2: Prepare the shrimp
Defrost peeled shrimp and
microwave for about 2 minutes. Drain any extra water and let them cool. (You
can also use chicken.)
Step 3: Slice the vegetables
and fruits
Slice all your veggies and
fruits into thin, bite-sized pieces. Don’t worry if you don’t have the exact
same ingredients, use what you have!
Step 4: Cut the rice paper
Cut 3–4 large rice paper
sheets in half, then into thin strips. Some brands may crack, so test first. No
soaking needed!
Step 5: Toss the salad
First, toss the rice paper
strips in the dressing. Then add all veggies, fruits, and shrimp. Use clean
hands to mix everything gently. Don’t squeeze, just toss lightly.
Step 6: Serve
Plate the salad and enjoy!
The rice paper becomes soft and chewy, and the texture stays great even after a
while.
This salad is perfect for
hot days or when you want a light meal. Healthy, simple, and full of flavor!
