Super Easy Bibimbap
Bibimbap is one of Korea’s
most beloved dishes, but many people think it’s hard to make at home. Don’t
worry — today, I’ll show you a super simple version using just a microwave! With
a few fresh veggies and some rice, you can make a healthy, comforting meal in
no time. Perfect for busy days or when you don’t want to turn on the stove.
Ingredients (Serves 2)
- 2 handfuls of soybean sprouts
- ½ zucchini
- ¼ carrot
- 100g (3.5 oz) thinly sliced beef (or mushrooms)
- 1 tbsp cooking wine
- 1 tbsp tuna fish sauce (or soy sauce)
- 1 tsp minced garlic
- Salt & black pepper
- 2 handfuls of spinach
- 2 eggs (optional)
- Cooked rice (2 bowls)
- 1 tbsp sesame oil
- Sesame seeds
- ½ tbsp gochujang (Korean red pepper paste)
Instructions
Step1
Rinse the soybean sprouts. Thinly
slice the zucchini and carrot into matchsticks.
Step 2
In a microwave-safe dish,
add sprouts, zucchini, carrot, and sliced beef (or mushrooms). Season with
salt, pepper, 1 tbsp cooking wine, 1 tbsp tuna sauce (or soy sauce), and 1 tsp
garlic. Cover and microwave for 5 minutes.
Step 3
After 5 minutes, add 2 handfuls of spinach on top and microwave for 1 more minute.
Step 4
Scoop warm rice into a bowl.
Top with the cooked veggies and beef. Add 1 tbsp sesame oil, sesame seeds, and
½ tbsp gochujang. Mix and enjoy!
