Korean Chive Kimchi + Chive Salad

Today, I’ll show you how to
make Chive Kimchi (Buchu Kimchi) — aromatic, refreshing, and perfect as a side
dish. And as a bonus, I’ll also share a quick and easy Chive Salad recipe. ✨
Chive Kimchi Recipe
Ingredients
- 18oz (500g) chives (Korean or Chinese chives)
- 5 tbsp Korean chili flakes (gochugaru)
- 4 tbsp fish sauce
- 1 tsp minced ginger
- 1 tbsp honey (or sugar)
- 1 tbsp sweet rice flour
- 200ml water
- 1/2 onion, sliced
- 1/4 carrot, sliced
Instructions
1. Prepare the chives
Trim the roots and yellow leaves, rinse 2–3 times, and shake off excess water.
2. Make the rice paste
Mix 1 tbsp sweet rice flour with 200ml water. Cook until thickened, then let cool. 👉 You can substitute with regular flour.
3. Make the seasoning
In a large bowl, combine
chili flakes, fish sauce, rice paste, honey (or sugar), and minced ginger. Add
sliced onion and carrot, then mix well.
4. Mix with chives
Cut the chives into
bite-sized pieces and gently mix with the seasoning.
5. Serve or store
You can enjoy it right away,
or refrigerate overnight for a richer flavor.
Bonus Recipe: Chive Salad
Ingredients
- 9oz (250g) chives
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp plum extract (or sugar)
- 1 tbsp vinegar
- 1 tbsp gochugaru
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
Instructions
Cut the chives into 2-inch
pieces.
Mix all seasonings together, then toss gently with the chives. That’s it!
Today, we made Chive Kimchi
and a simple Chive Salad.

Notes
- Chives naturally have a garlic-like flavor, so you don’t need extra garlic.
